Very hot milk will kill the yeast. And in cold conditions they will act very weakly.

The quick yeast dough for pies turned out great - soft, airy, fluffy. In just an hour, it almost tripled. Instead of fresh yeast, I used instant yeast (10 grams), so I didn’t dilute it in milk, but added it directly to the flour. I needed about 800 grams of flour. From this dough I baked buns with sugar and cinnamon. Bake for about 20 minutes at 200 degrees. The buns turned out incredibly soft, tender and very fluffy. Julia, thank you very much for the recipe!
