    How to cook nectarine compote for the winter? Prepare your food. Take the ripest nectarines, but not spoiled ones, carefully select fruits that are too soft - they can cause the compote to ferment. Wash good, strong fruits thoroughly, remove seeds and cut into 2-4 pieces.

    Rinse the jars very well under running water. It is not necessary to sterilize them for this recipe, since they will be scalded with boiling water twice. Place the chopped nectarines in jars 2/3 full.

    In a separate saucepan, bring the required amount of water to a boil.

    Pour boiling water over nectarines in jars to the very top. Cover the jars with lids and leave to stand for 15 minutes. Pour boiling water very carefully so that the jars do not crack due to temperature changes.

    Then drain the jars back into the pan, leaving the nectarines in the jar. To do this, it is convenient to use a special lid with holes. Add the required amount of sugar at the rate of 300 grams per 1 liter of water. Bring the syrup to a boil and simmer for 5 minutes.

    Pour the syrup into the nectarine jars. Now it’s better to pour the syrup level with the neck so that there is no air left between the lid and the product.

    Screw the lids on the jars. First, pour boiling water over the inside of the lids. Place the jars upside down under a blanket and leave them there until they cool completely. In this way, you will additionally sterilize the lids and check their tightness. Store the compote in a cool, dry place. Bon appetit!
