    Peel the lemon (preferably only the zest (less white pulp), otherwise the drink will be bitter). Set the zest aside (do not throw it away; you will need it).

    Place a saucepan with water and sugar on the fire. Bring to a boil.

    While the water is boiling, take a peeled lemon and squeeze out the juice (I cut the lemon in half, insert a fork into the pulp and squeeze, gradually turning it around the fork).

    When the water starts to boil, add the zest (you can also add mint for flavor). Let it simmer for 1-2 minutes. and remove from heat. Leave to brew (I usually do it in the evening and leave it overnight).
