    How to make wine from yellow plums? The main ingredient in this recipe is plums. They should be ripe, but without visible damage.

    Do not wash plums under any circumstances, because... The plaque present on the fruit contains a huge amount of bacteria necessary for fermentation. Remove the pits from the plums and cut them into halves. Fruits with seeds cannot be used - such wine can even be dangerous.

    Grind the plums into a pulp in any convenient way. I used an immersion blender.

    But you can pass the plums through a meat grinder or, if you have very ripe fruits, simply grind them into puree with a masher.

    Transfer the plum puree into a fermentation container.

    Since plums are not very juicy fruits and do not produce much moisture, water is always added when making wine from plums. Pour water into the plum puree. Fans of tart and spicy drinks can add a cinnamon stick, clove buds, star anise, thyme, oregano, currant branches to the fermentation container - all this is quite acceptable and appropriate.

    Stir, cover tightly with gauze and put in a dark place for 5 days. Stir occasionally.

    After the specified time, strain through several layers of gauze or through a sieve several times. Pour the resulting liquid into the fermentation container again.

    Add half the sugar. Adjust the amount of sugar to your taste. My wine is of medium sweetness, so basically there is not much sugar.

    Put a glove on top and place it again in a dark place. The glove will first inflate, then deflate. I've had 20 days until this moment.

    Strain again, trying not to touch the cloudiness from the bottom of the jar, add the remaining sugar and repeat the procedure again with a glove. Wait for it to deflate again. All the turbidity will again remain at the bottom, the wine will become much lighter and more transparent. This time it took me 16 days. If you want to get an even lighter and clearer wine, repeat the glove procedure again, but in this case divide the amount of sugar into 3 fermentation steps.

    Pour the wine into bottles and seal. Plum wine will be fully aged and ready after 1-2 years, but young wine can be drunk after 4-6 months.
