Homemade marshmallows on pectin with strawberries

STEP 1
How to make homemade marshmallows with pectin? First of all, we prepare the necessary products. You can replace strawberries with any other berries or fruits.
STEP 2
To prepare strawberry puree, first rinse well and chop three hundred grams of fresh strawberries into a blender cup.
STEP 3
Grind the berries in a blender to form strawberry puree.
STEP 4
Place the prepared strawberry puree in a saucepan placed on the stove.
STEP 5
Pour one hundred grams of sugar into the saucepan with the puree and stirring, bring the strawberry puree to a boil over medium heat on the stove.
STEP 6
After boiling, lower the heat on the stove and, stirring constantly for ten minutes, simmer the strawberry puree until thick.
STEP 7
Take a deep plate, then put the prepared strawberry puree into it and cool.
STEP 8
Take a large bowl and pour fifty grams of sugar into it, then put ten grams of apple pectin into the bowl and mix.
STEP 9
Pour three tablespoons of warm boiled water into a bowl and mix all the ingredients well.
STEP 10
Place the cooled strawberry puree into a common bowl and mix all the ingredients well until smooth, then set the bowl aside for one hour for the pectin to swell.

Pour four hundred grams of sugar into a saucepan placed on the stove, then pour one hundred and twenty milliliters of water into it and, stirring, cook the sugar syrup for seven to eight minutes.

Place the whites of two chicken eggs in a bowl with the strawberry-pectin mixture.
STEP 13
Beat all ingredients in a bowl with a mixer until the berry mass is fluffy and homogeneous.
STEP 14
Pour the prepared sugar syrup in a thin stream into a bowl with the berry mixture and mix all the ingredients together until a homogeneous thick mass is obtained for five minutes.
STEP 15
Pour three grams of citric acid into a common bowl and continue to beat all ingredients well until the berry mass is homogeneous.
STEP 16
Take a pastry bag and fill it with the prepared berry mixture.
STEP 17
Squeeze the prepared berry mass onto parchment and form marshmallows.
STEP 18
Leave the formed marshmallows on the parchment to dry for ten to twelve hours.
STEP 19
After time has passed, sprinkle the top of the marshmallows with a mixture of starch and powdered sugar.
STEP 20
