A great way to teach your little one to eat healthy cottage cheese! While the child was small and was just beginning to get acquainted with our food, I was focused on finding culinary recipes for kids. They had to meet the criteria of being tasty and very healthy. One of the dishes that I prepared myself was cottage cheese. I found many different options for making cottage cheese for children. I really liked one. This, in my opinion, is the simplest method, which I still use now when I want to make a cottage cheese dessert for my grown-up children.

Hello! Store-bought cottage cheese does not always inspire confidence or is high in price... Therefore, we often prepare cottage cheese ourselves. I have never tried this method of preparing cottage cheese as described in this recipe “Homemade cottage cheese for children from kefir”, so I decided to try it. Now it’s clear, why is it called for children... Because the curd is creamy, tender and very tasty. And children often don’t like lumps in their food. True, the preparation process turned out to be quite long for me... I had about 1.5 liters of homemade kefir, poured it into a plastic bag and put it in the freezer overnight. Perhaps because of this, it froze and took on a not very convenient form for defrosting... Store-bought kefir in a bag would have frozen in a thin layer, but mine would have frozen in a lump... Thus, it thawed for me all day... By evening I cut it a thawed lump with a knife. I had kefir thawed on a cotton waffle towel and it was completely saturated with whey... But it was very difficult for it to drain... I decided that I needed to intervene and placed a plate with a jar filled with water on top as a press, and this helped, the curd separated ....And somehow I managed to photograph it for the report... The children really liked the cottage cheese. It looks like cottage cheese cream or cottage cheese thoroughly punched in a blender, of course, for our large family one such portion is not enough... And the usual method of preparing homemade cottage cheese (warming up kefir) is faster. But I will definitely take note of this method - freezing kefir, because it turns out to be a ready-made curd cream. And you need to take into account that the kefir must be tasty, not over-acidified, and therefore the curd will turn out very tasty! I recommend everyone to try this option for making cottage cheese! At first, I also prepared cottage cheese from kefir for my children, only in a different way, in a water bath. Then I read that it is undesirable to give such cottage cheese to children, there is a risk of poisoning. Then I started making it from milk and lemon: pour the juice of one lemon into 1 liter of hot milk, mix, let stand, curd flakes will begin to form, strain. I haven’t heard about freezing kefir; probably when frozen, all sorts of harmful things like sticks die. In general, you need to try it.

Not a culinary recipe, but a find! You should definitely try this option. Quickly and without any hassles. It’s so good that there are such electronic cookbooks. I usually made it from kefir and milk. I added 2 tablespoons of kefir to hot milk, stirred, and then evaporated in a water bath. The curd turned out very tender.

according to this recipe, the curd is really incredibly tender, I tried it, it’s very tasty, I didn’t even bother with the fat content of kefir
