Fried pork ribs with mayonnaise

Step-by-step preparation
STEP 1

How to make ribs for beer and any side dish? To prepare this dish, take all the necessary products from the list. There are very few of them, namely pork ribs, ready-made dry spices for meat, a little salt, mayonnaise (preferably homemade) and refined vegetable oil with a high smoking point.
STEP 2

If necessary, defrost pork ribs at room temperature. Rinse them under running cold water. Dry with paper towels. Cut off the film on the ribs, so they marinate faster and better. Cut them so that there is one seed in each piece.
STEP 3

Sprinkle the sliced ribs with salt and spices. Do not overdo it with adding seasonings, otherwise the dish will acquire a specific taste. In order not to oversalt the meat, read the composition of the prepared spices you are using on the packaging; it may already contain salt.
STEP 4

Coat the ribs on all sides with mayonnaise. You can replace it with soy sauce (in this case there is no need to salt the meat, since soy sauce is already salty enough on its own). If time permits, place the meat in the refrigerator to marinate for a couple of hours (preferably overnight).
STEP 5

Pour vegetable oil into a large frying pan with high sides (preferably cast iron) and heat. The amount of oil will depend on the fat content of the pork ribs. If they have a large layer of fat, then less oil will be needed. How to check that the oil is hot enough? Dip a wooden spatula into it, if bubbles gather around, then you can fry the meat. Fry them over high heat for 6-7 minutes on one side until golden brown.
STEP 6

Then turn the ribs, browned on one side, and fry for about two more minutes over high heat. Thanks to this frying, a golden brown crust is formed on top of the ribs, which “seals” all the juices inside.
STEP 7

After 2 minutes, cover the pan, reduce heat and cook the ribs for about 10 minutes more.
STEP 8

After 10 minutes, lift the lid, turn the ribs over again and cook for about 5 more minutes, covered, over low heat.
STEP 9

After about 5 minutes, turn off the heat. The cooked pork ribs are soft and juicy. If you make a cut on them, clear juice will flow out.
STEP 10

Sprinkle the dish with chopped dill before serving. Eat fried ribs hot with pickled or fresh vegetables and salads. You can also prepare potatoes, stewed cabbage, buckwheat, rice, and pasta as a side dish.
