STEP 1

How to make fricassee with mushrooms? You can use absolutely any mushrooms for this dish. In France, fricassee is typically made with champignons, porcini mushrooms or morels. Wild mushrooms, of course, will make the dish richer in taste and aromatic. Fricassee with honey mushrooms will turn out to be very tender, aromatic and tasty; gourmets will appreciate this dish. I just have honey mushrooms. Wash the mushrooms thoroughly, remove the stems, leaving them a couple of centimeters in length.
STEP 2

Ideally, cover wild mushrooms with cold water and leave for a couple of hours to remove insects hiding under the caps. Then drain the water, wash the mushrooms again, put them in a saucepan, add water and cook for 20 minutes from the moment they boil. Drain the water and wash the mushrooms. If you have store-bought champignons, you do not need to boil them first.
STEP 3

Peel the onions and cut them into small cubes. Pour vegetable oil into a frying pan (it is better to use a cast iron or thick-walled frying pan). Let's warm it up. Fry onions on it until transparent. Remove the onion from the pan into a bowl.
STEP 4

Place the mushrooms in the frying pan in the oil where the onions were fried and fry them over medium heat for about 15 minutes (time indicated is approximate), stirring occasionally with a spatula.
STEP 5

Then add the fried onions and spices: salt, ground black pepper to taste, you can add any other seasonings if desired.
STEP 6

Pour in the cream. Cream can be replaced with fatty and thick sour cream, the mushrooms will turn out even tastier and more tender. But if sour cream is used, then the sour cream must be diluted in a container with water and a tablespoon of wheat flour must be added so that it does not curdle in the pan. Pour the creamy sauce into the frying pan with the mushrooms and simmer them over low heat under the lid for about 10 minutes.
STEP 7

Let the dish sit under the lid for a couple of minutes and serve, with a side dish or as a separate dish. Bon appetit!
