  1. STEP 1

    STEP 1

How to knead the dough for yeast pies fried in a frying pan? Prepare all the necessary ingredients. Take the highest grade flour. Any odorless vegetable oil will do. Before using yeast, read the instructions for it. Some yeast must be activated by first dissolving in warm water, while some can be added directly to the flour. For preparing dough for pies, those that need to be pre-activated are suitable.

  2. STEP 2

    STEP 2

To knead the dough, take a deep bowl in which it will be convenient to mix dry and liquid ingredients. Heat the water to a temperature of 37-40 degrees. In the absence of a special culinary thermometer, the required temperature can be determined in the following way: you need to drop a drop of water on the inside of your wrist. If the feeling is neutral - neither cold nor hot, then the temperature is correct. Add sugar and yeast to the water.

  3. STEP 3

    STEP 3

Stir with a spoon until the sugar is completely dissolved. If the temperature is too low, the yeast will work more slowly and will take longer to cook. At elevated temperatures, the yeast will die, the dough will not rise and the taste of the finished pies will be spoiled.

  4. STEP 4

    STEP 4

Add 4 tablespoons of sifted flour, mix and leave for 10-15 minutes in a warm place. Flour for dough must be sifted in order to sift out small debris and saturate the dough with oxygen, so that it rises well and is airy. If a fluffy cap appears on the surface, it means the yeast has activated and you can continue cooking. If not, you need to take other yeast.

  5. STEP 5

    STEP 5

Add salt and 2 tablespoons of vegetable oil to the dough. Reserve another spoonful for greasing the bowl (step 9). Mix everything well so that the salt dissolves and the oil disperses evenly throughout the liquid.

  6. STEP 6

    STEP 6

Sift half the required amount of flour into a bowl to sift out small debris and oxygenate the dough. Stir with a spoon until smooth. Sift the remaining flour into a separate container.

  7. STEP 7

    STEP 7

Since the properties of flour of the same type, but from different manufacturers, may differ, to obtain the desired consistency, add flour in small portions; you may need less or more. When it becomes difficult to knead with a spoon, start doing it with your hands. Knead the dough thoroughly.

  8. STEP 8

    STEP 8

Do not “fill” the dough with flour - it should turn out soft and tender. If the flour remains, it will be useful to you when you make pies.

  9. STEP 9

    STEP 9

Grease the bottom and sides of the bowl with vegetable oil to prevent the dough from sticking to the bowl. Also knead the finished dough with butter using your hands. Cover the bowl with a napkin or towel so that it does not dry out and rises well. Leave in a warm place for about 1-1.5 hours.

  10. STEP 10

    STEP 10

When the ideal yeast dough on water increases 1.5-3 times in volume, it is ready and you can start working with it. Make pies by greasing your hands with butter or dusting them with flour. But keep in mind that if there is a lot of flour on the pie, it will burn during the frying process.

Today I’m making dough for yeast pies fried in a frying pan. Reduced the amount of ingredients by half. I don't need a big portion this time. The dough turned out soft and pliable. I had two types of filling: mashed potatoes with fried onions and stewed cabbage. Delicious pies are made from this dough. Thanks for the recipe, Ropotushka!
