STEP 1
How to make bird's milk? Prepare all ingredients. It is better to choose thicker sour cream, but not less than 20%. If possible, it is better to purchase sour cream at the market, but if this is not possible, you can also use store-bought sour cream for dessert. Buy high-quality chocolate for glaze, preferably bitter, but you can also use milk chocolate. It is better to cool the whipping container in advance in the refrigerator along with the whisks, so the whipping process will happen faster.
STEP 2
First you need to prepare the sour cream part of the bird's milk. Pour the gelatin into a bowl, fill it with water at room temperature and leave the gelatin to swell for 15 minutes.
STEP 3
At this time, place chilled sour cream in a whipping container, add sugar and beat the contents of the container until fluffy. Beat the mixture for about 10 minutes. Be careful not to overbeat the sour cream, otherwise after thickening it may become liquid again.
STEP 4
After 15 minutes, when the gelatin has already swelled, melt it in a water bath. It should dissolve and become liquid. Now cool the melted gelatin to room temperature.
STEP 5
Add 2-3 tablespoons of whipped sour cream into the cooled gelatin solution. Stir.
STEP 6
Pour the resulting gelatin-sour cream mixture into the sour cream mixture and mix with a spatula. The mass should be of a homogeneous consistency. You need to mix well so that the gelatin part is present in the entire mass.
STEP 7
Pour the resulting sour cream mixture into bowls, if necessary, smooth it out a little, shaking the bowls a little. Immediately put the bowls in the refrigerator so that the sour cream mixture hardens a little, otherwise it will not be possible to apply the chocolate glaze in an even layer.
STEP 8
Now you need to prepare the glaze. Using a sharp knife, chop the dark chocolate into small pieces and place in a small ladle. Place sour cream in the same ladle. Place the ladle over the steaming pan and melt the ingredients, stirring with a spatula. When the mass is melted, let it cool slightly.
STEP 9
Pour the finished chocolate glaze into bowls and smooth. Place the dessert bowls in the refrigerator for 45 minutes. During this time, the dessert will cool and thicken. After the specified time, dessert can already be served.
