Cold borscht is just what you need in the summer. When it’s hot, you don’t want to eat soups, and it’s impossible to eat only sandwiches and salads all summer. The first time I tried cold borscht was at sea, in some restaurant I don’t remember. But I really liked the taste, I cook everything the same as in this recipe, only at the beginning I prepare cabbage broth, it is obtained from young cabbage leaves - this is the basis for borscht, and then everything is according to the recipe described above. The main thing is not to make meat broths for cold borscht. Bon Appetit everyone!)

Interesting recipe, I’m always used to borscht being hot, with a lot of meat, but here it’s cold and lean, so unexpected. In principle, the composition is light, which is what you need on a summer day, cold, tasty and not heavy on the body. I will definitely make this dish in the summer, and I think so more than once.
