ottimista78, here’s the thing, there’s a little secret. You can do it with the seam down. But I first bake it with the seam up, then when the chicken is almost ready, I bake it with the seam down for a few minutes and increase the temperature. The second time I bake it until it browns. It is better to bake any stuffed chicken in the oven this way. I think it's clear why?
