STEP 1
How to make cheese cookies in the oven? Prepare your food. Take high-quality oil that complies with GOST. Take it out of the refrigerator in advance; it should soften well. Choose hard or semi-hard cheeses, I have Maasdam, it will be very tasty with Parmesan and similar aged cheeses. STEP 2
Grate the cheese on a medium grater. Not on large ones, as the chips will be too large and the dough itself will not be homogeneous.
STEP 3
Add soft butter and egg yolk to the cheese. Add a little salt, taking into account only the taste of the cheese. Mix cheese and butter until smooth.
STEP 4
Sift flour into the cheese mixture, but not all of it, about 100 grams. Mix in the flour first with a spatula, then with your hands. You may need less or more flour than indicated, check the consistency. Read about the properties of flour at the link in the article at the end of the recipe.
STEP 5
Knead the dough, adding flour if necessary, until smooth and not sticky. It should remain soft. Form the dough into a ball, wrap it in film or a bag and put it in the refrigerator for at least 30 minutes. During this time, the oil in the composition will harden and the dough will be easier to work with.
STEP 6
After the allotted time, remove the dough from the refrigerator. Divide it into 2 parts. Place one piece between two sheets of parchment. Roll it out with a rolling pin into a circle 2-3mm thick. The parchment will prevent the dough from sticking.
STEP 7
Cut the rolled out layer onto the plate and then into 8 segments. It is convenient to do this with a pizza cutter. To make imitation holes, use any available means. I took a pastry cutter; bottle caps and plastic straws will do. Do not throw away the scraps, but mold them and roll them out again. Make blanks from the second piece in the same way.
STEP 8
Carefully transfer the “cheese pieces” to a baking tray lined with baking paper. It is convenient to do this with a spatula. If desired, you can sprinkle the top of the dough with sweet paprika, sesame seeds, cumin, flax seeds, sunflower seeds or any other spices.
STEP 9
Bake cookies in an oven preheated to 180°C, top-bottom mode, about 15 minutes. The exact time will depend on the features of your oven.
