    How to make spicy Caucasian adjika? Prepare the ingredients. Unlike adjika, which housewives prepare in our country, the Caucasian one does not contain tomatoes, carrots and bell peppers. It is prepared from only four ingredients: hot pepper, garlic, coriander and salt. Thanks to this, such adjika can be called real Caucasian, because it turns out to be very spicy and aromatic. And the cooking process is very simple and fast.

    Hot peppers can be used red and green for adjika. Rinse the hot pepper pods thoroughly under running water and dry. Remove the stalk with seeds. When working with hot pepper, you must wear rubber gloves, otherwise you can burn the skin on your palms, and under no circumstances should you touch your face or eyes at this time. Place the prepared peppers in a blender bowl.

    Peel the garlic, grate the garlic cloves on a fine grater or chop using a blender along with hot pepper. The blender can be replaced with a simple meat grinder, although the preparation process will be a little longer than using a blender, but it is believed that adjika will turn out more tender and tastier when prepared using the old machine.
