    Add crushed cookies and walnuts to the carrots. Mix everything thoroughly and put it in the refrigerator.

    Sprinkle shredded coconut onto cling film.

    Wet your hands with water and, pressing tightly, place the frozen carrots on the coconut flakes.

Good afternoon It's no secret that all children love all sorts of tasty treats.... Of course, parents want to enrich their children's diet with healthy goodies. I was looking for such a recipe and when I saw the carrot jezerye, I decided to make this dessert. I had large carrots and, in order to maintain proportions, I recalculated the number of pieces per gram. Fortunately, the website has a very convenient calculator for converting measures! I reduced the amount of sugar to 120 g, because... carrots are very sweet and the cookies also contain sugar. I grated the carrots into small strips and covered them with sugar, left them for 15 minutes to let out their juice, and then simmered them until soft in a frying pan. I had oatmeal cookies and a regular cracker - I crushed them in a blender into fine crumbs. Some of the nuts were also crushed in a blender. After the carrots became soft and the juice had evaporated, I mixed them with cookies and chopped nuts. In the absence of cling film, I cut the plastic bag and poured the coconut flakes evenly. I placed the carrot mixture on top of the shavings and began to roll it up. Then I sent it to cool. I had difficulty cutting the finished dessert; I couldn’t make an even cut (perhaps I needed to cool it longer) so I rolled it into balls. I think next time I won’t bother with evenly laying out and forming the roll, but will just put everything together and roll the balls. What can you say about the taste? This is delicious! The children tried it while they were forming the balls and already half was left for photos... And knowing that there is nothing harmful in such sweets, my soul is happy!
