    How to make butter at home? Prepare the necessary ingredients. It is better to purchase cream on the market; it should be very fat (at least 33%). I didn’t have the opportunity to buy homemade cream, so I bought it at the store, its fat content was 35%.

    The heavy cream needs to be cooled before you start cooking. Pour the cream into the container in which you will whip it. It is better to take a container with high sides so that when whipping, splashes do not fly beyond its limits. Place the container with cream in the refrigerator. It is also better to put whisks (classic and for kneading dough) in the refrigerator, this will speed up the whipping process. Place the water in the refrigerator too, it should be ice cold.

    Start whipping the chilled cream at the highest speed using the classic whip attachment. When the cream begins to thicken, gradually reduce the speed. The cream should begin to form lumps.

    Depending on the quality and fat content of the cream, after about 10-15 minutes from the start of whipping, a white liquid will begin to separate from the cream - this is buttermilk. In appearance it will resemble serum. Swap out the regular whisk for a spiral dough attachment and continue whipping the cream for another 5-10 minutes.

    Using a wooden spatula, try to gather all the creamy pieces into one lump. Pour the buttermilk into a separate jar. It is not useful for making butter, but it can be used for making pancakes, bread, dumplings and other dishes.

    Pour 100 ml into the oil. ice water and beat for 5 minutes using the dough hook. Drain the water and repeat these steps 3 more times. This procedure helps remove the remaining buttermilk from the oil.

    After draining the water for the last time, thoroughly mix the resulting oil with a wooden spatula. It should come together into a single mass.

    Cover a rectangular container with polyethylene and place the oil in it. Compact, level and shape the butter. Close the container with a lid and put the butter in the freezer for 1 hour. In an hour, homemade butter will be ready. Bon appetit!
