    Half an hour after the start of boiling, add peeled carrots and a medium-sized onion to the pan.

    As well as washed stems of lovage, parsley and cilantro. The stems can be tied tightly with white tailor's thread if you plan to use broth. This will make it easier to remove the herbs from the pan. Cook the meat over low heat with the lid closed for one and a half hours.

    Twenty minutes before readiness, add bay leaf and allspice peas. Check the meat with a knife for doneness. If the knife slides easily into the thickest part, it's ready. Remove the onion, herbs and spices from the broth. I use carrots later, for example, for serving.

I often boil beef in a large piece. According to this recipe, in my opinion, you can boil any meat in a large piece (be it beef, horse meat or lamb). Or even several types of meat at once, for example, beef together with horse meat, as in besbarmak (meat in Kazakh). This time I had horse meat on the bone, I decided to boil it the same way as beef. The author mentions that he does not like meat broths , in our family, on the contrary, the children really like broths with noodles. You can also cook any soup based on broth. To make the broth tasty, it is advisable to use meat on the bone. And so that the broth turns out transparent and there is no need to remove the foam, I prepare it as follows: First, I place the entire piece of meat in boiling water and wait for the foam to rise, take it out, and rinse it under running water. At the same time, so as not to wait for a long time, I set another pan with filtered water to heat up. Place the meat in clean boiling water. This way you get a beautiful transparent broth. The meat must be cooked over very low heat, avoiding active boiling, so that the broth remains transparent, until it is noticeable that the flesh has separated from the bone. Be sure to immediately salt and add bay leaf and peppercorns. Carrots can be added later. It took about 2.5 hours until it was ready. The meat, be it beef or horse meat, turns out tasty and aromatic.
