The simplest classic is more popular. You only need three ingredients: birch sap, citric acid and sugar. Pour the birch sap into an enamel pan, put it on the fire, bring to a boil, remove the yellow foam that forms from the surface with a slotted spoon.

    Add sugar and citric acid and let them dissolve while stirring constantly. Turn off the heat. Sterilize jars of the required volume using one of the convenient methods: in a water bath, in the oven or in the microwave. Wash the lids, boil and dry.
