When I was little, my grandmother made tripe soup. To be honest, I don't remember what it tasted like. I decided to try making this soup myself. And I found this pickle recipe. The tripe broth turned out delicious, I thought it was even a little sweet. My beef tripe rassolnik soup turned out to be quite thick. The kids liked it, although they didn’t eat the tripe itself because “Mom, we can’t chew it” (next time I’ll try cutting it even smaller). The male half of the family was pleased with the soup. I cooked rassolnik soup from beef tripe separately for myself. In our family, I’m the only one who loves tripe, in any form. But I haven’t made soup with it yet. Before cooking tripe, I soak it for several hours and change the water. Then I bring it to a boil several times and change the water again. For the last time I pour boiling water over it, add bay leaf, onion, parsley stems and peppercorns. This time the tripe was cooked in three hours, it all depends on the degree of hardness. All this time I had pearl barley soaking. When the tripe became soft, I cut it into long strips and combined it with cereal. I cooked the pearl barley until it was soft, and at the same time the tripe was cooked additionally. Then I added potatoes and fried carrots and onions to the pan. I cut the pickled cucumber into quarters and put it last. I also poured in half a glass of brine, which makes the taste of the pickle more interesting. The soup takes quite a long time to prepare, but it's worth it! Rassolnik is delicious and filling! It has an unusual taste and delicious aroma!

A PICKLE FROM BEEF TRIPLE looks delicious in the photo, but can someone please explain what beef tripe is? I understand that this is a by-product, but what part of the organs?

The tripe is the stomach. It is better to buy it already in purified form.

You can also cook bean soup. It works out well too. But the pickle tastes better. For the sake of pickle, you can tinker.
