    How to make apricot compote? To prepare the compote, prepare all the necessary ingredients. Choose apricots that are ripe but firm. And close the compote immediately from the collected apricots, otherwise they may have time to spoil. Choose fruits without damage.

    Rinse the prepared apricots well in running water to remove contaminants. Cut each apricot in half and remove the pit. The bones can be thrown away.

    Rinse jars for compote well with soda and rinse thoroughly in warm water. Fill the jar 1/2 or 1/3 with apricot halves. The more apricots there are in the jar, the richer the taste of the finished compote will be. But, at the same time, there will be less compote in the jar.

    Separately, bring the water to a boil and pour boiling water over the apricots to the very top. Cover with a lid and let stand for 15-20 minutes so that the apricots warm up well. I do not sterilize jars for compote. It is enough that boiling water is poured into them.

    Then drain the hot water from the jar into a saucepan and add sugar. Place the pan on the fire and bring the syrup to a vigorous boil. Let it simmer for a couple of minutes. Cover the remaining apricots with a lid and a towel on top to keep them warm.

    Pour the finished boiling syrup over the apricots a second time to the very top and close tightly with the lids.

    Turn over the finished jars of compote and check for leaks. Cool the compote completely and store it in a cool place. This could be a cellar or basement. Open a jar of aromatic compote in winter and return to summer! Enjoy your treat!

It's time to harvest apricots. I made the jam, now I seal the apricot compote for the winter in a liter jar. By the way, it’s just convenient for me to use a small container. And in winter we’ll open the jar and use it all at once. For this compote, I took 1 liter 200 ml jars. Therefore, I increased the amount of products quite a bit. I always used whole apricots, but here are halves. It was interesting what would happen. And the result was a compote of bright, rich color. This doesn’t happen with whole fruits) I was worried that the compote itself would be cloudy, but no, it’s quite transparent, only pieces float in places. The taste is also very rich and pleasant.
