Pear lemonade with sage

    1. Place a quarter of a lime, cut into slices, into a tall narrow glass. Add sage leaves. Crumb the ice by crushing the ice cubes in a food processor with strong, sharp blades, or by wrapping them in a kitchen towel and beating them with a rolling pin or meat mallet.

    2. Add a couple of tablespoons of crushed ice to the glass and mash with a muddler. A muddler is a plastic or wooden bartender's pestle that is used to squeeze juice from fresh fruits, berries or herbs directly into the container in which the cocktail is served. If you don’t have it on hand, you can get by with a tablespoon.

    3. Add ice to the rim of the glass. Carefully pour in the pear juice. You can use freshly squeezed or packaged juice

    4. Add a little sugar syrup - literally half a teaspoon - and gently stir with a bar spoon. However, you can not add syrup at all, but simply add it to a glass of sparkling water.
