    Wash the spinach and dry. Separate the petioles from the leaves. If you can't buy fresh spinach, frozen spinach will do. It will need to be defrosted first and the liquid released during defrosting should be drained. It is better to choose young, unovergrown spinach, then it will probably not taste bitter. Spinach leaves should be wide and deep dark green in color.

    Wash green peas and dry. Peas are suitable fresh or frozen. Before adding, scald frozen peas with boiling water and dry.

    Beat the eggs with a whisk in a deep bowl until the whites and yolks combine.

I made an omelette with spinach in a frying pan using this recipe. My eggs are homemade. I bought the spinach already washed. I used frozen green peas. I took hard cheese. The spices I added were salt and ground black pepper. Beat eggs with milk with a fork and add spices. Young spinach was slightly simmered in a frying pan with a piece of butter instead of vegetable oil. Filled with milk and egg mixture. When the omelette set on the bottom, I added green peas without defrosting. I also sprinkled with coarsely grated cheese. Cooked covered over low heat until done. The omelet with spinach turned out amazing. It is not only aromatic and beautiful, but also very tasty and healthy. A great breakfast in minutes. Great recipe!
