To make pies in the oven and donuts, I used a recipe for lean yeast dough for pies and pies in the oven. I have good, proven yeast, so I halved the amount and also reduced the volume of water. I was unable to knead the dough until it was non-sticky, so I left it to rise in a warm place as it turned out - a little runny. And she transferred the already risen dough onto a flour-dusted surface, and also constantly dipped her hands in flour while shaping. With such a soft, sticky dough, the result was a very tender and airy pastry; you wouldn’t even immediately understand that the dough was lean.

Just a suuuuper recipe!!! I have never made such a successful dough using dry yeast. But the dough stood not for 1 hour, but a little longer, and rose 4 times. The author does not write how he worked with the test later. I greased the work surface with oil, and my hands too, the dough was beautifully soft, I easily shaped it with my hand, and made the pies. And then, as in the fairy tale, “One, two, three, don’t cook any more.”
