Jewish Matzo - flatbread in the shape of a rug
Matzo is a ritual flatbread, a reminder of the biblical “manna from heaven.” Matzo is a ritual bread baked on Passover to commemorate the exodus of the Jews from Egypt. About that very time when the Jews had to flee hastily and had no time to bake bread for the journey. It is eaten like bread with any food. But you can also make many different dishes from matzo itself. And knedlach, and matsebray, you can even bake cakes, because the use of any other flour except matzo flour is prohibited these days. Only matzo and flour made from ground matzo are kosher. The culinary recipe for matzo is extremely simple.
The matzo itself can be made from any flour - wheat, rye, barley or oatmeal. What to do if the ancestors of the Jews did not have time to bake anything tasty and during their flight they took with them only flour and water, which they had prepared in the evening for unleavened bread.

How simple it is))) We were once treated to matzo, I liked it, but for some reason I didn’t think to try it myself. I was looking for lavash and found matzo!!! That’s it, I’m going to cook and then I’ll complement your wonderful recipe with my modest photographs.

Forgot to mention one important nuance. According to kashrut, no more than 18 minutes should pass from the beginning of the dough to baking. Therefore, real matzah must either be kneaded in very small portions, or cooked in a huge oven. Although I baked it in a frying pan, without oil, it turned out original. In 18 minutes I managed to bake 2 cakes (with kneading).
