    How to make a salad from fresh raw zucchini for every day? Prepare your food. The youngest zucchini is suitable, small in size, with thin skin. Or zucchini, it doesn't matter. Instead of cherry tomatoes, regular tomatoes will do. Any greens will do, I used parsley.

    Start cooking with the dressing. Wash and dry the greens, tear off the leaves from the thick stems. Chop it finely.

    Peel the garlic and also finely chop it. Adjust its quantity to your taste - you can put less.

    Put honey in a bowl (it’s better if it’s liquid), pour in any vegetable oil (ordinary sunflower or olive oil will do). Squeeze some lemon juice. Add chopped greens. Add salt and mix the dressing well.

    Wash the zucchini and cut off the ends. Peel it. Cut the peeled zucchini into slices using a vegetable peeler. And then the resulting plates are cut into long thin strips. Leave the middle with the seeds, do not cut it - it will be rough.

    Place the resulting “spaghetti” from the zucchini in a bowl and pour in the dressing. Stir and leave the zucchini to marinate for 10 minutes.

    Wash and peel the carrots. Also cut it into thin strips using a vegetable peeler.

    Slice the cucumber in the same way. It is better to cut off the thick skin. Add the carrots and cucumber to the bowl with the squash. Stir the salad.

We loved our daily fresh raw zucchini salad! I never thought that zucchini could be eaten raw. Thanks to the marinade, they are not only edible, but also incredibly tasty! Preparing vegetables for salad takes a lot of time and is a painstaking task). Although, if you wish, you can grate everything for Korean salads. But I followed the recipe and made slices with a vegetable peeler and then cut the vegetables into noodles. I did not use the pulp with seeds from cucumbers. I used olive oil for the marinade and, in addition to lemon juice, added a teaspoon of apple cider vinegar; I like the pronounced sourness. The easiest way to stir vegetable “noodles” is with two forks. The salad is very tasty, crispy and aromatic! It's hard to tear yourself away from him. The next day I liked it even more, it was well soaked and flavored. Thanks for the recipe!
