    How to make pulled pork at home? Prepare all the necessary ingredients. Take boneless pork; the best parts for drying are fillet, loin or neck. Choose lean meat. Salt must be non-iodized. For spices, I took ground black pepper, sweet paprika and smoked paprika. In general, absolutely any spices will do. You will also need a piece of gauze and a piece of twine.

    Rinse the meat well under running water and then dry well with paper towels. Excessive moisture is not needed - the meat should be dry. Rub the meat with salt on all sides. Place it in an enamel or glass container. It is better not to use a metal one - the meat may oxidize.

    Place a flat plate on top and place some weight on it. Place the pan with meat in the refrigerator for three days.

    Turn the piece of meat over every day to ensure it is evenly salted. Liquid will form at the bottom of the pan - this is normal.

    After three days, remove the meat and pat it very thoroughly with paper towels to remove any remaining brine. If you like your meat not too salty, you can rinse it first with water and then dry it with paper towels.

I prepared this delicacy, it turned out great!!! There is no comparison with the store-bought surrogate, where God knows what is mixed in. This is exactly the taste and consistency I wanted. My piece is thicker and therefore took longer to dry. Everything is simple, tasty and cheap!

These are the pieces when cut. The salt drew out the moisture, the taste was rich, I would say concentrated. A real delicacy!
