STEP 1
How to make curd filling for a pie? Prepare the necessary ingredients for this. Choose cottage cheese with medium humidity. To make the finished filling more uniform, the cottage cheese can be rubbed through a sieve. The amount of sugar can be changed or not added at all (if the raisins are very sweet).
STEP 2
Pour hot water over the raisins and leave to stand for 10 minutes. Then drain the hot water and rinse the raisins. Hot water will steam the raisins and become soft. Place the washed raisins on a towel and dry them. There is no need for excess moisture in the filling.
STEP 3
To prepare the filling, place the cottage cheese in a spacious bowl and add sour cream, sugar and vanillin. Divide the eggs into whites and yolks. Add the yolks to the cottage cheese. Mix everything.
STEP 4
Place the egg whites in a separate bowl and beat well until fluffy.
STEP 5
Protein foam holds its shape. Place the whipped whites over the cottage cheese and fold them in gently, without disturbing the fluffiness.
STEP 6
Next, stir in the dried raisins.
STEP 7
The curd filling for the pie is ready! It must be used immediately for baking. Otherwise, after standing, the splendor from the whipped whites will settle. This filling will be an excellent filling for pies, pies or dumplings. For pies and dumplings, you can reduce the number of eggs.
