  1. STEP 1

    STEP 1

How to make curd filling for a pie? Prepare the necessary ingredients for this. Choose cottage cheese with medium humidity. To make the finished filling more uniform, the cottage cheese can be rubbed through a sieve. The amount of sugar can be changed or not added at all (if the raisins are very sweet).

  2. STEP 2

    STEP 2

Pour hot water over the raisins and leave to stand for 10 minutes. Then drain the hot water and rinse the raisins. Hot water will steam the raisins and become soft. Place the washed raisins on a towel and dry them. There is no need for excess moisture in the filling.

  3. STEP 3

    STEP 3

To prepare the filling, place the cottage cheese in a spacious bowl and add sour cream, sugar and vanillin. Divide the eggs into whites and yolks. Add the yolks to the cottage cheese. Mix everything.

  4. STEP 4

    STEP 4

Place the egg whites in a separate bowl and beat well until fluffy.

  5. STEP 5

    STEP 5

Protein foam holds its shape. Place the whipped whites over the cottage cheese and fold them in gently, without disturbing the fluffiness.

  6. STEP 6

    STEP 6

Next, stir in the dried raisins.

  7. STEP 7

    STEP 7

The curd filling for the pie is ready! It must be used immediately for baking. Otherwise, after standing, the splendor from the whipped whites will settle. This filling will be an excellent filling for pies, pies or dumplings. For pies and dumplings, you can reduce the number of eggs.

    STEP 8

I made this pie using biscuit dough. It will also be very tasty with yeast dough. Cook with pleasure!

An excellent option for curd filling for an open pie. I found your recipe for cottage cheese filling with raisins and couldn’t resist making it. I love cottage cheese and cook it myself using different recipes. But since my child doesn’t like raisins, I decided to make not an open pie or a casserole (I often make it without raisins), but to fill pancakes for adults. I’ve never made pancakes with cottage cheese and raisins, only cottage cheese pancakes without any additions. I prepared it according to the recipe, excluding the whites, as the filling would have been too runny for the pancakes. Everything is simple and very fast. I made the filling from 200 grams of homemade cottage cheese, counting the number of products using the site’s calculator, it’s very convenient. The curd filling turned out very tender and sweet. Enough for 12 pancakes. The combination of soft pancakes with the most delicious and delicate curd filling with raisins is something!!! My dessert flew off the table unnoticed. I'll be cooking again soon) Thanks for the great recipe!

My favorite filling for cottage cheese pies is sweet, delicious, mmm! It is suitable not only for closed, but also for open pies such as French tart or cheesecake. It sets well and bakes. You can even try baking it as a cottage cheese casserole (but I haven’t tried it myself).
