STEP 1
How to make cream cheese for leveling a cake? Prepare all the necessary ingredients. Take natural butter without adding vegetable fats. It must be soft, so take it out of the refrigerator in advance, cut it into pieces and let it sit at room temperature until softened. It’s better to let the oil sit for 2-3 hours.
STEP 2
Then take a spacious bowl in which you will prepare the cream. Place soft butter and the required amount of powdered sugar into it. Turn the mixer on low speed at the beginning so that the powdered sugar is evenly incorporated into the butter. Then turn it to maximum power and beat the cream into a fluffy mass.
STEP 3
Beat the cream at maximum speed for 1-2 minutes. During this time, the powdered sugar will dissolve in the butter, and the cream will become whiter and airier.
STEP 4
Add curd cream cheese and a pinch of vanillin to the cream (no need to add more, as this may give the finished cream a bitter taste). Again, turn the mixer back on low speed to combine everything. And then turn it to maximum to beat the cream.
STEP 5
Our ideal butter cream cheese for covering the cake is ready. It turns out to be a homogeneous, stable consistency. Keep the cream at room temperature until assembling the cake. Before leveling, the cake must be kept in the refrigerator for several hours to harden.
STEP 6
Thick cream cheese can be colored with any food coloring. To obtain a white color, use titanium dioxide. And to get, for example, a blue color, any gel will do. Apply the cream over the entire surface of the cake - on the sides and top, using a spatula. Then smooth it out with a scraper. To do this, place the scraper at an angle of 90 degrees to the side of the cake and turn the cake. Place the finished cake in the refrigerator so that the cream hardens.
