Porous chocolate or chocolate with various additives will not be suitable for these purposes. The sour cream and butter for the glaze must be of high quality, then it will have the desired consistency and taste. The amount of powdered sugar can be adjusted depending on the sweetness of the chocolate used.

    How to melt chocolate? Break it into pieces and put it in a bowl. You can heat it on the stove, in a water bath, or in the microwave. Make sure that the chocolate does not overheat - in the sauna the bowl should not touch the water, and in the microwave, select a short time and medium mode. If the melted mass turns out to be thick, then dilute it with a spoon of hot water.

    Place butter in a bowl with hot chocolate and stir until smooth and glossy. This should be done with smooth movements so that air bubbles do not form in it. This may affect the final result of application.

    Add powdered sugar to the bowl with the icing. It’s better to add it in small portions; all 110 g may not be needed (it all depends on the sweetness of the chocolate). Stir the glaze after each addition. The powdered sugar must be very finely ground, otherwise grains will be felt in the finished glaze. If this does happen, slightly heat the glaze in a water bath, stirring until smooth.

I needed frosting for a cupcake. I found on the website a suitable chocolate icing option for a chocolate cake. I have already made glaze with sour cream, but with the addition of cocoa. The chocolate base also turned out very well, even better) I took dark chocolate and melted it in the microwave for 10 seconds. Then I quickly mixed it with butter, and then with sour cream (at room temperature). I rubbed the mixture with a silicone spatula, it removes lumps well. I sifted the powdered sugar so it becomes more homogeneous. It took half as much powder. While I was trying it, I almost ate all the glaze). And it turned out very tasty, moderately sweet with a slight sourness. The texture is thick, smooth, delicate. I applied it directly to the cupcake and put it in the refrigerator. After about 15 minutes the glaze hardened like chocolate and cream. I'll take note of the recipe, I liked it.
