STEP 1

How to fry chicken liver in sour cream and onions in a frying pan? Prepare the necessary ingredients. It is better to take the liver chilled, it will turn out softer and tastier. If you have a frozen product, defrost it completely. Rinse the liver and place in a colander to drain excess water.
STEP 2

Peel the onion and cut into half rings. To prevent the onion from stinging your eyes when slicing, rinse it and the knife with cold water.
STEP 3

Heat the vegetable oil in a frying pan over medium heat and lightly fry the onion until translucent, stirring all the time.
STEP 4

Reduce heat, cover the pan with a lid and leave the onions to simmer for five minutes. The onion should not burn, otherwise it will ruin the entire dish.
STEP 5

If necessary, remove films and fat from the liver. Cut the liver into slices, like beef stroganoff.
STEP 6

Place the chopped liver in the pan with the onions.
STEP 7

Turn up the heat and start stirring vigorously so that the liver is fried on all sides. Thus, the juice inside is sealed, as it were, which makes the liver soft and juicy. Add salt and pepper to taste and continue frying. The color of the liver will gradually change from pink to grayish brown.
STEP 8

Reduce heat to low and cover the pan with a lid. Simmer the liver for a maximum of 10 minutes, otherwise it will become tough and not tasty. When cut, the finished liver has a uniform color and the juice comes out clear.
STEP 9

Prepare the sauce. To do this, add flour to the sour cream and stir until smooth.
STEP 10

Add sour cream and flour to the liver and mix well. The heated sauce will become thick, at this time you can add water, diluting the sauce to the desired consistency. Add salt if necessary. Simmer the liver in the sauce for another 1-2 minutes and turn off the heat, otherwise the sour cream may curdle. Chicken liver in sour cream and onions is ready. Mashed potatoes, rice, buckwheat or pasta are perfect as a side dish. Bon appetit!
