You can chop a whole chicken into pieces, or you can, like I did, take chicken fillet. For mushrooms I use champignons, which can be easily replaced with any other mushrooms.

    Take a deep frying pan for cooking. Heat it until hot and pour in a little vegetable oil. Cut the chicken fillet into small pieces and place in a frying pan. fry the meat for a few minutes until it changes color.

    While the chicken is roasting, prepare the mushrooms. Wash the champignons to remove dirt, dry and cut into slices.

    Add the mushrooms to the chicken and fry everything together for 7-10 minutes. During frying, juice will appear from the chicken and mushrooms and have time to evaporate. The chicken and mushrooms will begin to brown.

    Peel the onions and carrots, rinse to remove dirt and chop. Finely chop the onion. Grate the carrots or cut them into slices or cubes.

    Place onions and carrots in a frying pan. Mix everything. Fry everything together for 3-5 minutes. The vegetables will develop a characteristic aroma.

    Rinse the buckwheat. Drain all the water from it and place it in a frying pan. Stir. Then pour in the cream. Add salt and spices.

    Then pour in water. The total amount of liquid (cream and water) and buckwheat should be in a ratio of 2:1. This way the buckwheat will not boil, but will turn out crumbly. Bring everything to a boil. Cover the pan with a lid and cook over low heat for about 15 minutes. The buckwheat will absorb all the liquid and become soft.

For lunch, I prepared buckwheat with chicken and mushrooms in a frying pan for myself and my guests according to this recipe. Let me note that this is not an ordinary dish, but a very “rich” one! Therefore, it is great as a treat; at least my guests were full and satisfied). I cooked in a large wok - it's convenient. My chicken is in the form of fillet with legs. This meat is fattier than breast, for example, and therefore juicier. I took frozen champignons and put them in a frying pan when the meat was well browned. Fry everything together over high heat, stirring frequently. Then I threw in the onions and coarsely chopped carrots. The larger the carrot slices, the more intact the pieces will be in the finished dish. I increased the amount of buckwheat to two glasses, and the liquid accordingly. I was surprised at first by the use of cream, but it ended up working out just fine. I didn’t see any traces of cream in the finished dish, but the buckwheat became surprisingly tender and tasty! This is a discovery for me. In general, the dish is gorgeous, I recommend it to everyone!

A simple recipe for buckwheat with chicken and mushrooms. The products are all quite affordable. Light vegetable salads, fresh vegetables, and any greens are perfect for this dish.
