Although you can now buy kvass in any store, I decided to make it at home, since homemade bread kvass is healthier. In addition, the store-bought one has a lot of sugar, while the homemade one has as much as taste dictates. I pre-cut the bread into pieces, placed it on a baking sheet and dried it in the oven. When the bread was browned, I took it out, let it cool and put it in a clean three-liter jar. Before this, the jar was held over hot steam so that it warmed up thoroughly. Next, I poured boiling water over the dried bread, added sugar and set the jar to cool. I added the diluted yeast when the liquid in the jar became warm. I steeped the kvass for two days in a warm place. The jar stood in a deep bowl covered with a saucer on top. After adding yeast, an active fermentation process began, the bread swelled greatly, and numerous bubbles formed. The kvass “played”, a little liquid poured over the top into the bowl. When the kvass was ready, I strained it through a sieve and put it in the refrigerator. The kvass turned out to be fragrant, quite soft, not strong, moderately sweet, with a pleasant bready taste, well refreshing and quenching I'm thirsty. Thanks so much for the recipe!

Good recipe. I made it and it turned out very tasty. I think that such a drink will be very relevant in the hot summer. It will perfectly save you from thirst and pleasantly refresh you. You don’t need a lot of ingredients to make kvass. It really takes a long time to prepare, but it’s kvass. And if you make such preparations every day, then it turns out fine - while one jar is infused, then the second one is already ready.

I always make kvass in the summer. I use almost the same recipe. I cook a lot. Makes three three-liter jars. Only I make the starter first. I fill half a loaf of rye bread with warm water, pour three tablespoons of sugar and half a tablespoon of yeast into it. When the dough is ready, add it to the jars as per your recipe, add sugar and stir. The kvass turns out wonderful, sharp like soda.

In the summer it’s hot and you get drunk only with kvass. I’ve never made it myself, but I bought it, the last time I bought it was not successful, everyone’s stomachs hurt. This year I’ll try this recipe myself. Kvass is very refreshing, and also healthy if you’ve made it yourself.
