What to choose for “needles” is everyone’s business. These can be black olives, green olives, straw cookies, grated or Korean carrots, beets, pomegranate seeds, crushed nuts, crackers, grated cheese, chips, seeds, prunes cut in a certain way, meat, mushrooms, cucumbers. Or simply a salad sauce painted in a certain color with lines “drawn” in it.
