Making creme brulee is a fairly simple process, although it does take some time. At its core, it is a mixture of egg yolks, sugar and vanilla, combined with milk (Catalan variation) or cream (French variation) and baked at high temperature until crusty. What could be more elementary? But what is the result! The highlight of the dessert is the crispy caramel covering the delicate contents.
Interesting recipe: 1. Separate the yolks and whites.2. Using a mixer, beat the yolks a little with half the sugar.3. Pour the cream into a saucepan. Add the other half of the sugar. Heat over low heat, without allowing it to boil.4. Add vanilla seeds to the heating cream. If there are none, then ordinary vanillin.5. Pour the hot warblers into the beaten yolks in a thin stream, without stopping stirring.6. Strain the creamy yolk mixture through a strainer. Pour into small (200-250 ml) heat-resistant molds.7. Place the molds in a large baking sheet with high sides. Pour boiling water approximately 2/3 of the way up the bowls to create a water bath in the oven.8. Bake at 140 degrees for 40 minutes. Readiness to determine visually: the creme brulee in the center has thickened, but shakes, resembling jelly.9. Cool the finished product. Leave in the refrigerator for 3-4 hours until completely thickened.10. Sprinkle the frozen creme brulee with sugar. Caramelize.
Helpful tips:• There are several ways to caramelize sugar in dessert. The first is a specialized culinary burner. It allows you to keep control over the entire caramelization process. The second is flambéing. The whole point is that sugar is lightly sprinkled with alcohol and set on fire, and during burning it turns into a caramel coating. The third one is the simplest. You can get a caramel crust by sprinkling the top with sugar and placing a min on the heel. into the oven (top heat).• It is important not to overcook the cream base in the oven, otherwise, if the creme brulee bakes for a very long time, it will become unpleasantly hard or even curdle.
