Rustic Lenten Potatoes

Very tasty, aromatic, rosy potatoes - the perfect side dish! It took me 30 minutes to prepare the entire dish, 10 minutes to boil the potatoes, 15 minutes to bake the potatoes, and 5 minutes to prepare and cut everything else.
