Pies with herbs and cheese

Ingredients
Step-by-step preparation
STEP 1

How to make pies with herbs and cheese? Prepare the necessary ingredients for this. For the filling, use different types of greens that you have. I take dill, parsley, sorrel and green onions. You can add spinach, arugula, basil, etc. It is advisable to take two types of cheese. I have gouda and suluguni. Can be replaced with Adyghe and/or Russian. Read the link at the end of the recipe to see how to replace different types of cheese.
STEP 2

To prepare the yeast dough, heat the water until warm (35-37 degrees). Pour water into a bowl and mix with dry yeast. Add salt and sugar. Read all the nuances of working with yeast in the article on this topic. There is a link at the end of this recipe.
STEP 3

Then pour vegetable oil into the bowl, gradually add sifted flour and knead the dough. You may need a little more or less flour than indicated in the recipe. Be guided by the consistency of the finished dough. Read more about flour in the article at the end of this recipe.
STEP 4

The dough turns out soft, tender and plastic. Leave it in the bowl and cover with a towel. Place the bowl in a warm place for 1 hour to rise.
STEP 5

At this time, start preparing the filling. Rinse fresh herbs thoroughly and dry. Then finely chop the greens and place in a bowl.
STEP 6

Grate two types of cheese here. If the salt in the cheese is not enough for you, then you can add a little salt to taste.
STEP 7

Mix all the ingredients for the filling together.
STEP 8

Knead the finished dough and place it on the table, sprinkled with a little flour.
STEP 9

Divide the dough into 10 parts. Make a small cake from each piece. Place some filling and form a pie. Fill the filling tightly as it will shrink during baking.
STEP 10

Place the finished pies on a baking sheet lined with parchment. Let them sit for 10 minutes. Then brush the surface of the pies with egg yolk. If desired, you can sprinkle a little sesame seeds. Place the baking sheet in the oven, preheated to 180 degrees, for 20-30 minutes. The times are approximate, use your oven as a guide. Read more about how different ovens work by following the link at the end of the recipe.
STEP 11

The finished pies will increase in size and become golden brown. Remove them from the oven, transfer them to a bowl and cover with a towel. There they will lie, steam and will be very soft and tender. Bon appetit!
