    Place a bowl of oil in a water bath. Heat over low heat.

    The butter will gradually melt. In this way, simmer the oil for an hour and a half, stirring constantly.

    During simmering, a foam will form from the coagulated protein. We collect it in a separate bowl.N.B. if the butter is homemade, then the foam can be used for cooking, because it is pure protein, it is healthy, although it does not last long. If the oil is store-bought, it is better not to use it.

    After an hour, the foam stops coming out. And sediment forms at the bottom. Thanks to the water bath, it does not burn and can also be used in preparing various dishes.

    Let's prepare a container for storing ghee, install a sieve and lay gauze on top in several layers. We try not to shake the bowl of oil too much so as not to disturb the sediment and strain the oil.

    Here it is - beautiful, transparent, healthy ghee. A kilogram of butter makes a 500 ml jar. This ghee can be stored in the refrigerator for 1.5 years. With it, dishes will be much tastier and healthier!
