    How to freeze bell peppers for the winter in the freezer? Prepare the peppers. Ripe sweet peppers of any variety are suitable for freezing, preferably without scuffs or dents. At the end of summer, it is best to buy ours, the ground one: it is much cheaper. Wash the vegetables under running water. Pay special attention to the surface under the stalk, as soil usually accumulates there.

    Cut the peppers in half lengthwise and remove the stem and seeds with a small sharp knife.

    Chop the pepper according to your plans for it. I plan to add frozen peppers to vegetable stews, soups, and main hot dishes, so I will cut the vegetables into small strips. Peppers are also frozen in cubes, halves, and even whole (without seeds and stems) for further stuffing with meat.

    It is best to freeze peppers in airtight zip-lock bags or vacuum sealed bags. I'll use the latter. Distribute the pepper in a thin layer in small portions (about one dish) between the bags. If you have bags for vacuum packaging, make sure that moisture does not get into the intended seam area, otherwise the bag will leak air.

    Vacuum seal the bags. The packing mode for chopped peppers can be either normal or low pressure. Pepper doesn't care at all. If you choose a zip-lock bag, simply close the zipper with light pressure on the bag so as not to freeze the “air.”

    Label the packaging with the date of freezing and place the pepper in the freezer at a temperature of -18 degrees or lower. There it will be stored all winter.

I use frozen bell peppers for the winter to prepare soups, vegetable stews and gravies. Cut into strips, it takes up less space in the refrigerator than frozen whole. I freeze it in regular bags of different sizes. Ordinary dishes in winter and even early spring take on summer flavors.
