    Prepare the dressing. Squeeze the juice out of half a lemon using your preferred method. Remove all the seeds.

    Pour two tablespoons of olive oil into a small container. You can replace it with any refined vegetable oil. Add liquid honey, lemon juice, mustard. I took regular ready-made, non-spicy mustard. You can replace it with Dijon. Season with salt and pepper if desired. Mix well. The gas station is ready.

    Chop the peeled carrots on a Korean grater. You can also use a regular medium or coarse grater. The main thing is that the carrots are grated as thinly as possible.

    Wash parsley or any other greens of your choice, dry with paper towels and chop with a knife.

    Place the grated carrots in a suitable container and add chopped parsley. Pour the prepared dressing on top and mix the salad well with a fork or just your hands.

To be honest, I don’t know what a carrot salad should be like in a cafeteria, but I know that it’s very tasty) The dressing is just fire! A very interesting combination of ingredients, especially mustard and honey. I don’t have a grater for Korean carrots; I grated the carrots on a coarse grater, which comes with the meat grinder, and it works out very quickly. I made a double portion because carrot salad is delicious and affordable. Based on my taste, I added an extra couple of cloves of garlic through a press. I didn’t find any parsley, but my household doesn’t like it in combination with carrots). But lemon juice gives such a delicious fresh note, I even added a little more. I like to add lemon juice to all vegetable salads) I was pleasantly pleased that the salad does not need to be pickled. She immediately seasoned it and put it on the table. The adults loved this salad! I'll take note and cook it again.

For the first time I prepared a carrot salad just like in the cafeteria. I made a small portion for testing (which I later regretted)))). The preparation process is very simple and fast; it’s convenient that you can serve it immediately, without waiting for the salad to brew. For dressing I used sunflower oil, homemade mustard (quite spicy), honey and lemon juice. The taste of the salad, thanks to the dressing, turned out simply amazing. I didn’t even expect such a result! The combination of honey, lemon and mustard is just fire! No more spices need to be added so as not to interrupt the perfect balance of taste! I even added parsley in minimal quantities, more for brightness than for flavor. I'm happy to add this recipe to my stash! Thanks for the recipe, Vera!
