Blackberry mousse

STEP 1
Wash and dry the berries, prepare everything you need
STEP 2
Soak gelatin in water to swell
STEP 3
Pour the berries into a cooking container (saucepan, saucepan), mash with a wooden masher and place on low heat. Heat a little, without bringing to a boil.
STEP 4
Remove from heat, rub through a sieve. Fold the remaining cake into 5-6 layers of gauze and thoroughly squeeze out all the juice and pulp of the berries with your hands.

Put the pan with the juice back on low heat, add sugar.
STEP 6
Stirring constantly, bring to a boil and remove from heat. Dissolve the swollen gelatin in a water bath and add to the berry puree. Stir well until the gelatin is completely dissolved and cool.
STEP 7
Pour the cooled mixture into a mixing bowl and beat with a mixer for 10-15 minutes.
STEP 8
Beat until a fluffy dense mass is formed.
STEP 9
The result is a thick air mass.
STEP 10
Before serving, the mousse must be cooled, placed in bowls or tall glasses, and decorated with whole berries. Bon appetit!
