  1. STEP 1

    STEP 1

How to bake potatoes, onions and tomatoes in the oven Prepare all the necessary products. Of course, it is best to take fresh vegetables from a new harvest. These potatoes and tomatoes are much tastier than those sold in winter. Although now at any time of the year you can find more expensive, high-quality vegetables that are not inferior in taste to seasonal ones.

  2. STEP 2

    STEP 2

Wash the potatoes well; it is best to use a brush and a special vegetable cleaner. Peel the potatoes - try to cut the peel thinner, again best with a vegetable peeler. Cut the potatoes into half circles. If you have small tubers, you can cut them into circles.

  3. STEP 3

    STEP 3

Peel the onion and cut into thin half rings. It doesn't really matter how you slice it. These can be onion rings or cubes.

  4. STEP 4

    STEP 4

Mix chopped potatoes with chopped onions and add salt. Also at this stage, you can add some of your favorite seasonings to the dish: perhaps garlic powder, Provençal herbs, ground allspice or suneli hops. Choose according to your taste!

  5. STEP 5

    STEP 5

Wash the tomatoes, remove the stem and cut into circles. The circles should not be very thick, the optimal thickness is about 5 mm.

  6. STEP 6

    STEP 6

Prepare a heatproof baking dish. Place half of the potatoes and onions in the first layer.

  7. STEP 7

    STEP 7

    Then a layer of tomatoes.

  8. STEP 8

    STEP 8

Then the remaining potatoes and onions.

  9. STEP 9

    STEP 9

Pour vegetable oil over the dish. It can be absolutely anything: from corn to olive. But since the oil will be subjected to heat treatment, it is better to take refined types of oil.

  10. STEP 10

    STEP 10

Cover the pan tightly with foil, shiny side down. Bake in an oven preheated to 180 degrees for about 40 minutes without removing the foil. If you want the top of the dish to brown a little, remove the foil 10 minutes before the end of cooking.

  11. STEP 11

    STEP 11

Serve the dish immediately while it is hot! An excellent side dish for meat, poultry or fish is ready! Or a wonderful dish for a Lenten table! Bon appetit!

I prepared baked potatoes with onions and tomatoes in the oven as a side dish for salted red fish. Baking potatoes this way is very simple, and the result is very tasty. For baking, I used a cast iron pan. I did everything according to the recipe, only I didn’t cut the tomatoes into slices, but simply grated them, otherwise my daughter would have rejected all the tomato slices and wouldn’t have eaten them. In addition to salt, I added ground black pepper and paprika to the potatoes and onions (I sprinkled everything by eye). The potatoes turned out excellent. The onion added a nice sweetness to the whole dish and together with the grated tomato formed a sort of sauce that was very tasty. The potatoes were perfectly baked, but at the same time retained their shape and did not fall apart when pricked with a fork. Thank you very much for the recipe!
