Spanish sherry is a strong grape wine, the alcohol content of which does not exceed twenty revolutions. Sherry wine has a very delicate aroma and a very refined taste, thanks to which it is easy to recognize among many strong wines of other varieties.

The word “sherry” can only be used to describe wine produced in Spain in Andalusia. Sherry wine can be divided into two categories. These are Fino sherry and Oloroso sherry. Fino sherry is made from Palomigno grapes, which are grown exclusively on chalk soil. Fino sherry is always dry, its strength is eighteen percent. Fino sherry is aged under the fleur. A fleur is a fungus (or flower) that forms on the surface of the wine and looks like a thin film. Oloroso sherry is a sherry that is not stored under a fleur, does not even form one. Oloroso sherry is made with wort and spirit. The strength of this sherry is kept at sixteen percent. Oloroso sherry can be sweet, semi-sweet or dry. Everything depends only on the technology of its preparation and on how quickly the fermentation of sherry will be stopped. Sherry is very actively added to aperitif cocktails. Cocktails with sherry are ideal, to which, in addition to this wine, either whiskey, vodka, or gin is added. If you find a recipe that calls for sherry to be added to a dish, but you don’t have it on hand, don’t rush to despair. Spanish sherry can be safely replaced with Italian vermouth. Or any other vermouth (you can even use Moldavian vermouth), the main thing is that it is white and dry.
