    How to prepare hawthorn compote for the winter? Prepare all the necessary products. Take fresh hawthorn, preferably just picked. Make sure that the berries are clean, without foreign impurities. I use regular white sugar in compotes, but you can also use coconut or cane sugar. They will give the finished drink an additional aroma: in the first case - coconut, in the second - caramel.

    Rinse the jars well with soda and sterilize them in a way convenient for you. I recommend using medium-sized jars, optimally 2-3 liters. The lids must be boiled.     Sort the hawthorn and rinse well.

    Place hawthorn in prepared jars, filling them 1/3 with berries.

    Pour water into a saucepan, add sugar and bring to a boil over low heat. You can adjust the sweetness to your liking by increasing or decreasing the amount of sugar. Wait for it to completely dissolve and remove from heat. The syrup is ready. If you wish, you can add your favorite spices to the syrup, such as vanilla, cinnamon and nutmeg, or even herbs: mint, lemon balm, thyme.

    Pour half the syrup into the jar of berries and leave for 15 minutes.

    Pour the syrup from the jar back into the pan and bring to the boil again.

    Notice how the color of the berries changed: they turned some kind of golden. Pour the syrup into the jar, filling it up to the neck.

    Close the jars with sterilized lids or roll them up. Turn the jars upside down and leave until completely cool.

Hawthorn is very useful! My hawthorn was collected during a trip to Dagestan. We ate it raw, and made compote from the leftovers. I rolled it into liter jars so that in winter I could immediately empty the jar. After looking at the photo of the recipe, I realized that the compote would turn out almost colorless, so I added 5-6 frozen cherries to the jars for color. The recipe is simple and easy, everything was done quickly. I also tried the taste, a very pleasant tart drink. Thanks for the recipe!
