Margarine dough
As a rule, a margarine dough recipe implies a shortbread version. Everything else can be considered nuances, such as: it will be sweet or savory, bland or rich, very cool or softer and more tender. It is kneaded with milk, kefir, sour cream, and without all of the above products, with or without the addition of eggs. That is, you can find any recipe based on what is currently in the refrigerator.
Also, margarine can be included in homemade dough in three “guises”: very hard (literally from the refrigerator), softened (at room temperature) or melted. In the first form, margarine is usually grated on a coarse grater and chopped together with flour until crumbs form. After adding other products, knead the elastic dough. In the second, it is not critical in what order the ingredients will be mixed. For the third option, this can be of great importance (especially if the composition contains yeast).
The simplest margarine dough is made from flour, water, soda and salt. Sometimes they don’t even add soda or salt. That is, three products are enough for a lean test. When finished, it must be kept in the refrigerator for at least half an hour before rolling out. It is suitable for pies, scones, pies and snack cookies.
By adding sugar to the above composition, we get a sweet version of the dough. If you use additional dairy products, the dough will become more tender, tasty, and crumbly. And quite suitable for making, for example, a full-fledged pie without a cupcake type filling.
Also, dough mixed with margarine is suitable for baking in the form of a basket, designed for further filling - like a French tart or an American cheesecake. In most cases, margarine can be completely replaced with butter.
