I love these pies, but I don’t bake the apples first, I just grate them and mix them with the egg whites. I’ll try to make this recipe, I’ll be interested to see how it turns out, I’ll post step-by-step photos later.

LioVita, thank you very much for the recipe, the pie turned out delicious, airy and crumbly, but there wasn’t enough filling for that amount of dough, the number of apples was not indicated, I probably don’t have enough of them in the pie. All preparation took about two hours. There is one note regarding preparation: the apples should be put in the oven at the very beginning, only then make the dough, while it lies in the cold, prepare the filling.
