great recipe! I cook a little differently. I soak the chicken breast in the marinade (lemon juice and onion) overnight (2-7 hours), then I grease the roasting pan, put the breast, and top with mayonnaise-pineapple cheese-mayonnaise-pineapple cheese. Cut the pineapple into thin, long strips. The breast turns out very juicy and tender.
