This cake got its self-explanatory name for what it says: its ingredients must contain three types of chocolate: dark, milk and white. The volume may vary depending on the cooking method, but is usually in the range of 100-150 grams for each type.

It is worth keeping in mind that there are very different recipes for Three Chocolate Cake. In its classic form, the three chocolate layers of this cake are mousse layers of different colors, white, cream and brown. Add another fourth layer, sponge layer, with cocoa. To make the cake look beautiful when cut, all layers are made the same height.

But the biscuit layer may be thinner than the rest. In addition, it is made not only with baking in the oven, but also without it. In this case, the dough is kneaded using shortbread crumbs. Some do without this layer, leaving the cake with three layers, exclusively mousse.

The top part of the cake is decorated as desired: with mirror or regular chocolate glaze, sprinkled with cocoa, chocolate chips, drips of glaze are made on the sides without completely filling them, berries and fruits, ready-made candies, cookies, candied fruits, and marshmallows are laid out. The layers are arranged in color from darkest at the bottom to the lightest at the top.

Mousse for chocolate layers is also made in different ways. In one version, the composition contains milk and yolks, in the other - cream and starch. Gelatin is included in almost all recipes. It is important to remember that it can be different: some need to be filled with cold water until it swells, another can be immediately placed in a hot mixture and stirred until dissolved, and the third can be heated by steam or even in the microwave.
