Balish is a closed pastry, similar to a container filled with meat and potatoes. The basis of the balish pie is yeast-free dough. For the filling, any type of fresh meat is suitable, preferably with fat. And the broth will give the dish extraordinary juiciness.
Interesting recipe: 1. Knead the dough for balish. Beat milk, eggs, salt, sugar, soda, slaked vinegar, and butter in a suitable container. Gradually add flour. 2. Cover the homogeneous, elastic dough. Let it brew for half an hour.3. Chop the meat and potatoes into neat cubes. Finely chop the onion. Add some salt and pepper. Add spices to taste.4. Divide the mass into 3 unequal parts (large, medium and small).5. Roll out most of the dough and place it in a thick-walled heat-resistant mold so that the edge of the base hangs down. Be sure to oil the baking dish.6. Place the prepared meat and potatoes onto the base.7. Roll out the middle part and cover the filling on top. Carefully pinch the edges of both layers.8. Make a hole in the top of the balish, and make a “lid” from the remaining small piece of dough. Grease the pie with top butter. Send for 90 min. into an oven preheated to 180.10. After 90 min. take it out, open the “lid”, pour in the creamy meat broth.11. Return the cake to the oven for one hour.
Helpful tips:• Instead of potatoes, you can use rice.• If the top of the pie is browned ahead of time, cover it with wet parchment.• It is better to serve balish hot with broth or tea.
