Sorrel pie with sorrel

A delicious sorrel pie will be appreciated by both vegetarians and meat-eaters. It can be served as a snack or dessert. It all depends on the amount of added sugar, honey or any sweetener. Since sorrel is a very delicate substance, which can dry out quickly when directly exposed to high temperatures, the pie with it is made closed or aspic. However, there are also open recipes. But in most cases, besides sorrel, there are other products in the filling.

Vegetarians prepare sorrel pie from flour, sour cream, butter (or margarine), sugar and soda. That is, eggs are not included in its composition. Others may make the dough with eggs. But since we are talking about shortbread pastries, eggs are added to this only as a lubricant.

The filling for sweet pies is prepared as follows: cut the sorrel and cover it with sugar. Then it is simply distributed over the surface of the first layer and covered or filled with the second.

The filling for savory pies is prepared according to the same principle, but instead of sugar, salt, pepper, and spices are added.

For a juicier filling, use: cream, eggs (boiled or raw), cottage cheese, green onions, butter. In all three cases, the sorrel is not preliminarily subjected to heat treatment.

It is worth adding that even unsweetened pie is suitable for serving with tea or coffee.

It will also be useful to know that sorrel is a low-calorie product and that it helps eliminate toxins and cholesterol from the body. It also breaks down fats.

It is easy to combat the excess acidity of this product with milk or any dairy products - it neutralizes it well.

If you still need to heat treat the sorrel for the filling, then you can do this literally within two to three minutes, no more.
