Homemade sorbet
To make sorbet you need fruit puree (another option is juice), liqueur or wine, mint and tea, and syrup. It is not recommended to shake the mixture during freezing. Add meringue (Italian) to the finished sorbet to add volume. Nowadays sorbet is served between dishes (as an appetizer, dessert). In France, sorbets were served at dinner parties, between main courses, instead of liqueurs. When serving, sprinkle with liqueur and serve in ice cream containers and tall glasses.
